Summer Roasted Salmon

It was a chilly day in the Upper-Midwest and as I was looking through cookbooks for something to make for supper, I came across this warm sounding recipe.  SUMMER Roasted Salmon.  This supper is best described in three words: Best. Salmon. Ever.

This recipe comes from Tosca Reno's Eat-Clean Diet Cookbook.  Below is the recipe for this healthy and mouth-watering dish.
Ingredients:
5 - 6 oz. salmon fillets
2 tsp extra virgin olive oil
Sea salt and fresh black pepper
Juice of one lemon
1 bunch fresh green onions, trimmed
1/4 cup combined fresh chopped parsley, rosemary, thyme, and chives
*I also added in some salmon seasoning
Directions:
1. Preheat oven to 350 degrees
2. Prepare a baking dish with a light coating of cooking spray or olive oil.  Place salmon fillets in the baking dish skin side down.  Brush a coating of olive oil onto the salmon.  Sprinkle each fillet with some sea salt and black pepper.  Squeeze the juice of the lemon over the salmon.  Lay the green onions over the salmon.
3. Roast the fillets in the oven for about 10 minutes.  Remove the heat.  Remove the wilted green onions.  Dust each fillet with a generous helping of the chopped herbs.  Serve hot.
