Sure, eating an entire batch of cupcakes by myself may sound like a great idea, but I'm not sure my tummy would appreciate it much. That being said, below is a great recipe that I found on http://buddingbaketress.blogspot.com/ for two yummy vanilla cupcakes!
Ingredients:
1 egg white
2 tbsp sugar
2 tbsp butter, melted
1 tsp vanilla
1/4 c. flour
1/4 heaping tsp. baking powder
1 1/2 tbsp milk
Pinch of salt
Directions:
Preheat oven to 350 degrees and line a muffin pan with two cupcake liners.
In a bowl, add egg white and sugar and whisk until combined. Add in vanilla and melted butter and stir until mixed. Add flour, baking powder, and salt and stir until smooth. Stir in milk. Divide batter equally between the two cupcake liners.
Bake for 12-14 minutes or until cake is completely set and a toothpick inserted into the center of the cupcake comes out clean.
Let the cupcakes cool completely, frost as desired, and devour!
