Mochaccino Cupcakes


The yummy goodness of coffee and chocolate come together in these marvelous cupcakes!  Need I say more? .....oh, well maybe I'll share the recipe!
Makes 24 cupcakes

Ingredients for cupcakes:
1 package chocolate cake mix (+ all ingredients called for on the box recipe)
2 tbsp instant coffee granules, dissolved in a splash of water

Ingredients for Icing:
3.5 cups icing sugar
1.5 pounds of butter (3 sticks), softened
2 tbsp vanilla
4 tbsp cocoa powder
2 tbsp instant coffee granules
Directions for cupcakes:
Combine cake mix and all ingredients called for on the box recipe into a large bowl.  Dissolve the instant coffee in a tiny bit of water and mix into cake mix and other ingredients.  Refer to directions on box for baking temperature and time.

Directions for icing:
In a large bowl, beat butter and sugar until smooth.  Add cocoa, vanilla, and coffee granules and beat again until smooth.  For a firmer frosting, place the icing in the refrigerator for 10 minutes.
